Flame Weeding

This season we are trying a new method of weeding called "stale-bedding". We make the raised beds and then irrigate them for 2 weeks, allowing all the weed seeds close to the surface to germinate. After two weeks, while the weeds are still very small (no true leaves yet) we go through and torch the little buggers. Right after that we plant up those beds, trying not to disturb the soil, which would bring new seeds to the surface. Our hope is that this practice greatly reduces our weed pressure. Here are some before and after, and action shots.

We've been busy

Although crop production has slowed down, we have been busy getting ready for the 2012 growing season!

We have given our soils a rather large dose of compost and many of our fields were cover cropped this winter with a soil building mix. This translates to healthier soil that is able to produce delicious and nutritious produce in the coming year.

Another enormous task was getting our crop plan organized for next season. We tried something new, the Crop Planning for Organic Vegetable Growers handbook, and although tedious, it was very thorough and a great help! This season we know what we are planting, where in the fields it is going, when and how much! That sounds simple, but it took months to get together. We are excited to see how it goes this season!

Another project was getting our fields re-oriented (north-south), and dividing them into equal size blocks. The new orientation is going to help so much as we will take full advantage of sun exposure. The fields have been separated into blocks so that a crop rotation can be put into place. Crop rotation is a fabulous tool for maintaining soil and plant health.

Pictured above is our new and improved plant nursery, featuring a new protected hardening off zone and work area. Now, our veggie starts will be protected on those frosty nights.

We also built a plant sales bench next to our farmstand. Now you can search for that perfect garden addition without throwing out your back!

The winter has given us much needed time to get all these projects done, but we are excited about re-opening the farmstand and getting back on your table! We are still planning on being open on February 16th. Come see all the changes we have made, for yourself. Hope to see you soon,

This Week's Availability

Beautiful, multi-colored eggs from the farm's chickens.

Our eggs come in many colors because we keep several different breeds. There are many subtleties of browns and beige and also green eggs. The green eggs come from our three Americauna hens or "Easter Eggers" as they are sometimes called. Our hens spend their days eating bugs and weeds, and we think they make the most delicious eggs. We hope you'll try them.

Luckily, the rain has held off this morning so that we were able to get out into the fields and harvest. New this week are delicious sugar snap peas at $3.00 a pound. These peas are the kind that you snap the stem end off and and eat the whole pod. No need to string. They are great fresh or sauteed quickly in a hot pan with your favorite fresh herb. Also new this week are beautiful purple plum radishes at $1.50 a bunch. They are tender and sweet with just the right amount of spice to add to your salads. These are a new variety that we are trying at the farm so let us know how you like them. The most current issue of Sunset Magazine has a lovely article about spring greens for salads that has inspired us to offer pea shoots for $2.00 for a 1/2 pound bag.

No flowers this week due to the rain. We hope to have bouquets in the weeks to come as long as the weather starts cooperating.

Recovering from the cold and rain....

Ceanothus in a bloom.

This has been a great year for all the native plants like ceanothus that we have bordering our farm. They love getting the extra water the rains have brought and are flowering their heads off.

However, most of the vegetables in the fields are reacting to the cold and rain by growing very slowly if at all. Unfortunately, that means we don't have as much produce available for sale as we would like. Let's hope the weather warms up soon and we see the growth spurt that spring will inevitably bring to the fields.

Beautiful farm-fresh eggs from our chickens. The girls aren't laying much these days due to the short-days. Longer days will trigger them to lay more eggs. We still have several dozen available for sale at the stand but get here early because they go fast!

The freezing temperatures have taken their toll on the farm crops. Goodbye tomatoes, green beans, and eggplant...It's hard to accept that winter is here even though it is December. The frost does make the many crops taste better. Frost will "sweeten" kale, broccoli, carrots, and other cold-hardy crops. We should have some "super-sweet" brussel sprouts for the farm stand next week!

Looking for Something New? Try Fava Beans

The Central Coast is blessed with mild winters, and hence we sometimes do not fully appreciate the first harvest of early spring. One of these such crops is the fava bean or as the English call them, board beans. You may not know it, but for centuries, the fava bean was the only legume that many Europeans ate. Favas are one of the oldest cultivated plants and among the easiest to grow. It was not until the Americas were discovered that Europe began to eat other legumes. Yet sadly, favas have not really caught on in our American way of life. We at the Growing Grounds Farm, encourage you to try these amazing beans! We have flesh favas available now at our weekly farm stand. To help you prepare favas, we have have complied some information and cooking recipes, so that you can fully appreciate this delightful bean. Read on:

The picture above shows a harvested fava bean and the picture to the left shows a bee pollinating a fava flower (Both pictures taken by Cesar Lopez). Favas grow in a pale green, floppy pods and been a beloved early spring food on much of the planet for centuries. Favas — also known as Windsor beans, English beans, horse beans and pigeon beans — have long been diet staples in Asia, the Middle East, South America, North Africa and Europe. The beans have a buttery texture, slight bitterness and lovely, nutty flavor. Favas are high in fiber and iron, and low in sodium and fat. They have no cholesterol but so much protein (13 grams in a cup serving). Click here for additional nutrition information.

When it come to preparation, one can eat the whole pod or sting and shuck the beans out. Here are simple dishes to consider:

Italian Green Salad:
Fresh fava beans and young sheep cheese tossed with olive oil, lemon juice, parsley and a little hot pepper. (Fava Beans: A Little Spring On Your Plate)

Braised Whole-pod Fava Beans with Dill
Fava beans are a culinary highlight of spring, but double-shelling them takes time. Very young favas, though, can be eaten pod and all. Prep and Cook Time: 45 minutes.

Yield: Makes 6 servings

Ingredients
1/3 cup olive oil
1 sweet onion, halved and thinly sliced
1 1/2 pounds fava bean pods, ends trimmed and strings removed
3/4 teaspoon salt
1 tablespoon sugar
1/4 cup chopped dill, plus 1 tbsp. for garnish
Plain whole-milk or Greek-style yogurt

Preparation
1. Put oil and onion in a large pot over medium-high heat. Cook until fragrant, about 1 minute. Add favas, salt, sugar, and 1/4 cup water. Bring to a simmer. Cover and cook, stirring occasionally, 20 minutes.

2. Add 1/4 cup dill, cover, and cook until fava pods are tender and starting to fall apart, about 10 minutes. Sprinkle with 1 tbsp. dill and serve warm or at room temperature, with yogurt on the side.

Note: Nutritional analysis is per serving, without yogurt.

Asparagus Salad with Fava Bean Sauce
Notes: This salad was inspired by Loretta Keller of Bizou Restaurant & Bar in San Francisco. If fresh favas aren't available, use 1 cup shelled cooked favas (8 oz.; sold refrigerated in some supermarkets) or frozen baby lima beans. Fresh pecorino cheese, which has a creamy texture similar to that of jack, is available in specialty food stores; don't confuse it with dry pecorino romano. You can make the bean paste (step 3) up to 1 day ahead; cover and chill. Reheat to use.

Yield: Makes 8 servings

Ingredients
2 pounds asparagus
7 tablespoons extra-virgin olive oil
1 1/2 teaspoons white wine vinegar
1 quart bite-size pieces rinsed and crisped red leaf lettuce (3 1/2 oz.)
1 cup cherry tomatoes (optional), rinsed, stemmed, and halved
Salt and pepper
2 cloves garlic, peeled and chopped
1 pound young fava beans in pods, shelled (see notes)
1 cup shredded fresh pecorino (pecorino fresca; see notes) or jack cheese (4 oz.)

Preparation
1. In a 5- to 6-quart pan over high heat, bring 2 quarts water to a boil. Meanwhile, rinse asparagus; snap off and discard tough stem ends. Add asparagus to boiling water and cook until barely tender when pierced, 3 to 4 minutes. Drain and arrange on a platter or plates.

2. In a large bowl, mix 1 tablespoon olive oil and the vinegar. Add lettuce and tomatoes; mix gently to coat. Add salt and pepper to taste. Arrange salad alongside asparagus.

3. In the pan, over medium heat, stir garlic in remaining 6 tablespoons oil until limp, about 30 seconds. Add shelled beans and 2/3 cup water; cover and simmer over low heat until beans are very soft when pressed, 7 to 12 minutes. Mash with a potato masher. Remove from heat and push mixture through a wire strainer; discard skins.

4. Return bean paste to pan over low heat and stir until hot, 2 to 3 minutes. Remove from heat, add cheese, and stir until melted. Sauce should be thin enough to spoon over asparagus. If necessary, add a little hot water (2 to 4 tablespoons) to thin; do not return sauce to heat or cheese will become grainy. Add salt and pepper to taste.

5. Spoon warm sauce over warm or room-temperature asparagus.

Loretta Keller, Sunset, APRIL 2002

Fava Beans, Roman Style
Ingredients
Pancetta, one half-inch thick slice
3 pounds unshelled young fresh fava beans
2 tablespoons extra virgin olive oil
2 tablespoons onion, finely chopped
1/3 cup water
Black pepper, freshly ground
Salt

Preparation
1. Unroll the pancetta and cut it into stripes ¼ inch wide

2. Shell the beans and wash in cold water.

3. Cook the onion in the oil until it becomes translucent, then add the pancetta strips and cook for 2 to 3 more minutes. Stir in beans and pepper. Add water and simmer, covered, on low heat for 8 to 10 minutes if the beans are young and tender, or up to 15 minutes if the beans are larger and tougher. Add extra tablespoons of water if necessary. When the beans are tender, add salt, and cook for a few more minutes uncovered until the last of the water has evaporated.

Pasta with Fresh Fava Bean Sauce
Ingredients
2 tablespoons extra virgin olive oil
1-1/2 teaspoons minced garlic
1 tablespoon finely chopped fresh oregano
1-1/2 cups chicken stock or canned low-salt chicken broth
salt and freshly ground pepper
2 cups cooked, peeled fava beans
3/4 pound dried fettuccine
4 oz. piece pecorino cheese or Parmesan cheese

Preparation
1. Heat the olive oil in a medium saucepan over medium-high heat until hot. Add the garlic and saute briefly until light brown. Stir in the oregano, then add 1 cup of the stock. Bring to a boil, season with salt and pepper, and add 1-1/2 cups of the fava beans. Simmer to blend the flavors, about 3 minutes.

2. Scrape into a blender container and puree with the remaining 1/2 cup stock until smooth. Return the sauce to the pan and add the remaining 1/2 cup favas. Simmer gently and taste for seasoning. Add salt and especially pepper.

3. Meanwhile, bring a large pot of water to a boil and add salt. Add the pasta and cook until al dente, about 12 minutes. Drain, reserving about 1/2 cup of the pasta cooking water. Pour the pasta into a warm serving bowl and add the sauce. Toss well and thin with the pasta water, if necessary, until the sauce is glossy and not sticky. Serve immediately and grate the cheese over the top at the table.

4. Drizzle extra virgin olive oil over the pasta. Just before serving, ladle a little hot pasta water into the bowl for a couple minutes to warm it up. Drain the water before filling the bowl with the pasta.

We are so excited that you have decided to follow our Growing Grounds Farm's (Santa Maria) blog. The purpose of this blog is to connect our loyal patrons of our Farm Stand to the farm. In this blog you will have the opportunity to be the first to know of items which we will have for sale at our farm stand through a weekly post entitled "In the Fields..." Since we grow our products organically at the Growing Grounds, you will also see postings regarding organic farming and gardening.
